Single-varietal fruit, much of it from trees that have been producing for over a century — pitted, sliced, and diced by us, then cooked slowly with organic fair trade cane sugar and fresh-pressed lemon in six copper pots. Twelve years in. Twelve Good Food Awards. Every jar still leaves on the ferry.
